Salmon you say? I cannot cook salmon. Yes you can, its super easy, super yummy and super good for you. You just need a few simple spices, one pan and one oven. Its a one pan wonder!
You'll Need:
2 (4 oz) | Salmon fillets (if frozen, let thaw before using) |
1/2 head | Cauliflower, cut into small florets |
Dry Spice Mix: | |
1/3 cup | Parmesan cheese, grated |
1/2 tsp | Garlic powder |
1/4 tsp | Onion powder |
1/2 tsp | Paprika |
1/4 tsp | Salt |
1/8 tsp | Pepper |
1 tbs | Dried parsley or Oregano |
Wet Mix: | |
1 tbs | Lemon juice (juice from 1/2 lemon) |
1/4 cup | Plain low fat Greek yogurt |
2 tsp | Garlic, minced |
What to Do:
1. Pre-heat oven to 425
2. Cover large sheet pan with foil and pour 1/2 tablespoon EVOO on
3. Chop the cauliflower into small florets
4. Place florets onto one half of the pan
5. Sprinkle 2Tbs of the dry mix over the cauliflower
6. add the wet mix to the dry mix
7. place salmon on other half of pan and spread mixture on top evenly
8. Bake salmon 20 minutes, or until opaque in thickets part & topping is lightly brown
9. remove salmon to rest, it will continue to cook for 5 min
10. turn broiler to high and broil cauliflower for 2-3 min to get extra nutty flavor, watch is closely so does not burn
11. Enjoy!
I love too cook too and am a total foodie [minus spicy stuff]. I love cooking dinner for friends and Le Husband, it's just a wonderful way to say I LOVE YOU!

Im not the most motivated chef, I like simple and this looks simple enough for me to try!
ReplyDeleteI really really really really wish I liked salmon but I don't. Sady I've even had it right out of the Pacfic northwest in Seattle and still didn't like it. A little too fishy for me. I love anything with garlic and parmesan though ( most anything).
